Creamy GF fusilli
This creamy gluten-free fusilli is the perfect way to incorporate vegetables into your meal (and for your kids too). The chickpea pasta adds protein and fiber, making it a wholesome option for lunch or dinner!

Ingredients
• Fusilli: 200 grams (about 2 cups) of fresh chickpea fusilli
• Cream: 200 grams (about ¾ cup) of creamy cheese (I used stracchino)
• Zucchini: 3 cooked zucchinis (sautéed in olive oil)
Start by cooking the chickpea fusilli according to package instructions. In the meantime in a blender combine the zucchinis and the creamy cheese and blend until smooth. If the mixture is too thick, add a splash of extra virgin olive oil. Then mix the cooked fusilli with the creamy sauce.
