Looking for a delicious and healthy gluten-free treat? This GF Peanut Banana bread is naturally sweetened with dates and packed with wholesome ingredients like oat and rice flour! Moist, flavorful, and perfect for breakfast or a snack!

Ingredients:

✔️ Oat flour
✔️ Rice flour
✔️ 2 bananas 🍌
✔️ 1 egg 🥚
✔️ 1 tbsp peanut butter 🥜
✔️ Homemade natural date cream
✔️ 2 tbsp Greek yogurt

Instructions:

1. Preheat & Prepare – Preheat your oven to 350°F (175°C) and grease a small loaf pan with a bit of oil or line it with parchment paper.

2. Mash & Mix – In a bowl, mash the bananas until smooth. Add the egg, peanut butter, Greek yogurt, and date cream. Whisk until well combined.

3. Incorporate the Flours – Gradually add the oat flour and rice flour, stirring until you get a smooth batter. If the batter feels too thick, you can add a splash of milk or water.

4. Bake – Pour the batter into the prepared loaf pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

5. Cool & Enjoy – Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack. Slice and enjoy it as is, or spread a little extra peanut butter on top!
