Ingredients:
β’ 200g hazelnut flour
β’ Caramel made from date cream (blend 6 dates with water and Β½ teaspoon of bourbon vanilla powder)
β’ 1 egg
β’ 1 tablespoon peanut butter
Instructions:
1. Preheat the Oven: Set your oven to 180Β°C (350Β°F) and line a baking sheet with parchment paper.
2. Prepare the Date Caramel: In a blender, combine 6 pitted dates, a splash of water, and Β½ teaspoon of bourbon vanilla powder. Blend until smooth, adjusting water quantity to achieve a caramel-like consistency.
3. Mix Wet Ingredients: In a bowl, whisk together the egg, peanut butter, and the prepared date caramel until well combined.
4. Add Dry Ingredients: Gradually incorporate the hazelnut flour into the wet mixture, stirring until a cohesive dough forms.
5. Shape the Cookies: Scoop small portions of dough and roll them into balls. Place them on the prepared baking sheet and gently flatten each ball with your fingers or the back of a spoon.
6. Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cookies are lightly golden around the edges.
7. Cool and Enjoy: Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy your healthy hazelnut cookies with a cup of tea or coffee!
