These gluten-free brownies are rich, soft and deeply chocolatey — without the heaviness of traditional ones. Made with wholesome ingredients like Greek yogurt, ricotta, and dark chocolate, they’re the perfect guilt-free treat to enjoy with your afternoon coffee or to pack in your kids’ lunchbox.

They’re protein-rich, naturally sweetened (just a tablespoon of coconut sugar — and even that is optional!), and made in one bowl. No flour, no butter, no refined sugar. Just simple comfort food you’ll love sharing with your family.

Ingredients (makes ~6 squares)

  • 3 tablespoons unsweetened cocoa powder

  • 1 tablespoon coconut sugar (optional, or to taste)

  • 2 eggs

  • 2 tablespoons Greek yogurt (unsweetened)

  • 2 tablespoons ricotta cheese

  • A handful of dark chocolate chunks (70–85%)

  • A handful of pecans, roughly chopped

  • Optional: 1 tsp vanilla extract or a pinch of sea salt

Instructions

  1. Preheat your oven to 175°C / 350°F and line a small baking dish with parchment paper.

  2. In a bowl, whisk together the eggs, yogurt, and ricotta until smooth.

  3. Add the cocoa powder and coconut sugar. Stir well to combine.

  4. Fold in the dark chocolate chunks and chopped pecans.

  5. Pour the mixture into the baking dish and spread evenly.

  6. Bake for 15–20 minutes or until just set in the middle.

  7. Let cool for at least 10 minutes before slicing — the texture improves as they cool!
