Ingredients:
β’ 1 egg
β’ 1/2 cup kefir
β’ 1 cup oats
β’ 1/4 cup tapioca flour
β’ 2 tablespoons pure peanut butter
β’ 1 date (for natural sweetness)
β’ 1/4 cup sunflower seeds
Instructions:
1. Blend the ingredients: In a blender, combine the egg, kefir, oats, tapioca flour, peanut butter, date, and sunflower seeds. Blend until smooth and well combined. If the batter is too thick, add a little more kefir to reach your desired consistency.
2. Cook the pancakes: Heat a non-stick pan over medium heat. Pour small portions of the batter onto the pan to form pancakes. Cook for about 2-3 minutes on each side, until golden brown.
