Loaded Sweet Potato (Easy, Gluten-Free & Ready in 10 Minutes)
Ingredients
1 large sweet potato
½ cup cooked edamame
½ apple, finely chopped
2 tbsp dried blueberries
½ cucumber, diced
Fresh parsley, chopped
Fresh cilantro, chopped
Extra virgin olive oil
Salt & black pepper, to taste
Instructions
Cook the sweet potato (oven, air fryer or microwave) until soft.
Slice it open lengthwise and gently mash the inside with a fork.
Top with edamame, apple, dried blueberries and cucumber.
Finish with parsley, cilantro, olive oil, salt and black pepper.
Serve warm and enjoy!
