Loaded Sweet Potato (Easy, Gluten-Free & Ready in 10 Minutes)

Ingredients

  • 1 large sweet potato

  • ½ cup cooked edamame

  • ½ apple, finely chopped

  • 2 tbsp dried blueberries

  • ½ cucumber, diced

  • Fresh parsley, chopped

  • Fresh cilantro, chopped

  • Extra virgin olive oil

  • Salt & black pepper, to taste

    Instructions

    1. Cook the sweet potato (oven, air fryer or microwave) until soft.

    2. Slice it open lengthwise and gently mash the inside with a fork.

    3. Top with edamame, apple, dried blueberries and cucumber.

    4. Finish with parsley, cilantro, olive oil, salt and black pepper.

    5. Serve warm and enjoy!
