High Protein French Toast with Pistachio: a simple and nutritious breakfast to start your day with flavor and energy!
This protein-rich French toast is a family favorite and comes together in minutes. Soft, slightly crisp outside, and topped with almond butter, date syrup and crushed pistachios — it’s as satisfying as it is nourishing.
Ingredients:
• 2 slices of whole grain or sourdough bread
• 1 egg
• 50 ml oat milk
• 1 tablespoon Greek yogurt
• 1 teaspoon almond butter
• 1 teaspoon date syrup
• 1 tablespoon crushed pistachios
• Optional: cinnamon or vanilla extract
Method:
1. In a bowl, whisk the egg, oat milk, Greek yogurt and a pinch of cinnamon or vanilla if using.
2. Soak the bread slices in the mixture for about 30 seconds per side.
3. Heat a non-stick pan over medium heat and cook the soaked bread slices until golden brown on both sides.
4. Serve warm with almond butter, a drizzle of date syrup and crushed pistachios on top.
