🍨 2-Ingredient Pistachio Nice Cream

Simple, creamy & plant-based – no added sugar!

When it comes to summer treats, I’m always looking for something naturally sweet, satisfying, and quick to make. This plant-based nice cream is made with just two whole-food ingredients: raw pistachios and soft dates.
That’s it. No bananas, no dairy, no weird additives — just real flavor and creaminess from nature!

Ingredients (makes 2 small portions)

  • 1 cup raw pistachios

  • 10 soft Medjool dates (or more to taste)

  • A pinch of salt (optional)

🥣 How to Make It

  1. Soak the pistachios in water for at least 30 minutes. This softens them and helps create that super smooth, gelato-like texture.

  2. Drain, then blend with the pitted dates in a high-speed blender or food processor until creamy and thick.
    Add 1–2 tbsp of water only if needed to help it blend.

  3. Transfer to a small container and freeze for at least 2 hours.

  4. Before serving, remove from freezer and let sit at room temperature for about 15 minutes — this step makes all the difference in texture!

📝 Tips & Variations

  • Add a few drops of vanilla extract or a pinch of cinnamon for extra flavor.

  • Top it with crushed pistachios, cacao nibs or coconut flakes before serving.

  • Want it scoopable like real ice cream? Store it in a shallow container and use an ice cream scoop after letting it thaw slightly.
