Stuffed sweet potato with dreamy cream

Heyyy guys! How it’s going? Today, I’ve got a recipe for you that’s straight up sweet potato heaven!
Trust me, once you try this, you’ll be hooked!
Ingredients
1 (or more) sweet potato
For the filling:
broccoli
Peas
Avocado
Salt and pepper to taste
(I had some leftover of steamed veggies)
Cheese (mozzarella or provola)
Instructions
First boil the sweet potato in a pot for about 30 minutes, or until it’s soft and tender. Once it’s cooked, cut in half lengthwise and fill with your veggie mix (that you blended before until smooth). Then top with a generous amount of cheese. Bake to perfection in the oven at 480F for about 10 minutes….. and there you have it-sweet potato paradise! This combination is pure magic. Plus it’s healthy, easy to make, and the perfect way to use up leftovers (live my broccoli, peas and avocado).
