Sweet Potato Parmesan Frittata

This easy frittata is one of my favorite meal-prep recipes. It's delicious for breakfast, after a workout or as a quick lunch.

Ingredients

  • 4 pasture-raised eggs

  • Sweet potatoes, grated

  • Parmesan cheese

  • Seasoned breadcrumbs

Instructions

Mix all the ingredients together.

Cook in a non-stick pan over medium heat until golden, then carefully flip and cook the other side until fully cooked.

Slice and enjoy warm or cold.
