Creamy, tangy, crunchy — with no dairy or anchovies!
Ingredients
For the salad:
1 large head of romaine lettuce (or 2 hearts), chopped
1/2 head of purple romaine lettuce
A handful of red chard
2 tbsp nutritional yeast (optional, for extra umami)
Optional toppings: roasted chickpeas, avocado slices, capers
For the vegan Caesar dressing:
1 cup raw cashews (soaked for 30 min in hot water, then drained)
1 tbsp Dijon mustard (opt)
1 tbsp capers (or 2 tsp caper brine)
1 tbsp lemon juice
1 garlic clove
1 tbsp olive oil
1/2 avocado
¼ cup water (adjust for consistency)
A handful of chives
1 tbsp of white tahini
Salt & pepper to taste
Instructions
Prepare the dressing:
Blend all dressing ingredients in a high-speed blender until smooth and creamy. Taste and adjust salt, lemon, or capers if needed.Assemble the salad:
In a large bowl, toss the chopped romaine with the vegan dressing. Add croutons, nutritional yeast, and any toppings you love.Serve immediately for the perfect crunch — or keep dressing and lettuce separate until ready to eat.
