Creamy, tangy, crunchy — with no dairy or anchovies!

Ingredients

For the salad:

  • 1 large head of romaine lettuce (or 2 hearts), chopped

  • 1/2 head of purple romaine lettuce

  • A handful of red chard

  • 2 tbsp nutritional yeast (optional, for extra umami)

  • Optional toppings: roasted chickpeas, avocado slices, capers

For the vegan Caesar dressing:

  • 1 cup raw cashews (soaked for 30 min in hot water, then drained)

  • 1 tbsp Dijon mustard (opt)

  • 1 tbsp capers (or 2 tsp caper brine)

  • 1 tbsp lemon juice

  • 1 garlic clove

  • 1 tbsp olive oil

  • 1/2 avocado

  • ¼ cup water (adjust for consistency)

  • A handful of chives

  • 1 tbsp of white tahini

  • Salt & pepper to taste

Instructions

  1. Prepare the dressing:
    Blend all dressing ingredients in a high-speed blender until smooth and creamy. Taste and adjust salt, lemon, or capers if needed.

  2. Assemble the salad:
    In a large bowl, toss the chopped romaine with the vegan dressing. Add croutons, nutritional yeast, and any toppings you love.

  3. Serve immediately for the perfect crunch — or keep dressing and lettuce separate until ready to eat.
