Ingredients
6 Medjool dates (or soft dates)
Warm water (just enough to soften the dates)
Bourbon vanilla powder*
1 egg
Almond flour
Rolled oats
Carob seed flour
*I used Bourbon vanilla powder from Koro, but any high-quality vanilla powder or vanilla extract works well too.
Instructions
Soak the dates in warm water until soft.
Mash the dates into a smooth paste and mix in the Bourbon vanilla.
Add the egg and stir well.
Fold in the almond flour, rolled oats and carob seed flour until a soft dough forms.
Shape into cookies and place on a baking tray lined with parchment paper.
Bake at 180°C (355°F) for 20 minutes, then increase the temperature to 190°C (375°F) and bake for another 8–10 minutes, or until lightly golden.
Allow the cookies to cool before enjoying.
Storage
Store in an airtight container for up to 4–5 days, making them a perfect healthy snack to prepare over the weekend.
